Quick Zucchini “Lasagna” 

And no, you do not need any fancy slicer or spiraler for this recipe.

I have been making my most recent recipes by doing my best at using up everything in my fridge, and putting off grocery shopping for a couple of days! It had been fun, challenging and has been saving us money too!

This Zucchini Lasagna is one of them, I had two odd mushrooms and a single Zucchini I had to use up, some leftover marinara sauce and some various cheeses.

I started this meal by cutting a single Zucchini in half and then slicing each half lengthwise into as many thin slices as I could get.

I then layed out the first half of the Zucchini slices on the bottom of a small baking dish. I went on to the next step by adding a layer of marinara sauce, topped with thinly sliced mushrooms,  a half cup of spinach and a generous amount of feta and goat cheese(could have used ricotta instead). The remaining Zucchini slices were then placed on top and topped with more marinara sauce and mozzarella cheese! This went into a 400 degree oven for 25 minutes, and was ready to eat! 

It is surprising the meals you can create by using the oddest items in your kitchen!
