I am not a vegetarian or vegan by any means, but once in awhile I prefer vegetarian meals. Lately I haven’t been too interested in very meaty dishes and I came across this recipe. I thought it looked delicious, wholesome and fairly simple to prepare, so decided to try it out (of course changing some things up and putting a twist on it as I always do).
Instead of using canned tomatoes, I used chopped cherry tomatoes. I also added in fresh parsley, fresh cilantro, a dash of cumin, and a drizzle of honey for sweetness. My last alteration to this recipe was instead of waiting for the sweet potato to cook in the fry pan along with the onion and garlic, I cubed a sweet potato that I had baked in the oven the day before. This made it even quicker to prepare!
I have to say this recipe turned out to be a new favourite and will be a reoccurring meal at our home.
