Happy Friday to all!
Lately I have been fairly lazy with preparing my breakfasts…. I tend to reach for some yogurt and fruit, or instant oatmeal, rather than cooking up some eggs or pancakes. Waking up and getting going can be tough!
Although I enjoy my yogurt and fruit, I have found that it just doesn’t stick with me long enough for a breakfast; so instead of cutting it out, I will have it for a snack later on!
This morning the snow was falling, I curled up in a blanket on the couch and started my day with a delicious cup of coffee. I then fed my son his morning cereal and went on to make my breakfast!
Poached egg on ezekiel toast, with avocado, tomato and wilted spinach! Although I don’t tend to wake up craving eggs and vegetables, I find that the protein and wholeness of these type meals fulfill me and stay with me longer.
