Hearty Cabbage Roll Soup 

A lovely meal for the fall.

Quick and easy to make with little ingredients.

Can be made vegetarian without adding the ground beef. And using a vegetable broth.

My own recipe:


1 pound of lean or extra lean ground beef

4 cloves of garlic

1 onion 

1 tbsp of olive oil 

1 box of low sodium vegetable or beef broth

3 stalks of celery chopped 

3 carrots chopped 

1 small red (purple) cabbage chopped 

1 can of diced tomatoes 


2 tsp Thyme

1 tsp Oregano

1 tsp Parsley 

1/2 tsp Cayenne powder

1 tsp Chili powder

1 bay leaf 

Salt & pepper to taste

Optional: dash of hot sauce 

Optional: 1 cup of rice 


Mince 4 cloves of garlic and dice 1 onion, simmer in pot with 1 tbsp oil. Add ground beef and cook on medium heat until browned. Stir in all chopped veggies and let cook for 5-10 minutes, add broth along with 1/2 cup of water, diced tomatoes and spices(&hot sauce) and bring to a boil. Let simmer for at least 1 hour. If adding rice, add one cup 45 minutes prior to serving.
